Neapolitan Fudge

Description

This is a beautiful dessert to serve and adds some fun to the meal. It looks much like Neapolitan ice cream but tastes so much better!

Ingredients

Chocolate Layer:
1 1/2 t. butter
8 oz. cream cheese, softened
3 c. powdered sugar
16 oz. milk chocolate, melted and cooled

Vanilla Layer:
8 oz.) cream cheese, softened
3 c. powdered sugar
16 oz. white baking chocolate, melted and cooled
1 T. vanilla extract

Strawberry Layer:
8 oz. cream cheese, softened
3 c. powdered sugar
16 oz. white baking chocolate, melted and cooled
1 T. strawberry extract (or raspberry extract)
8 - 10 drops red (gel) food coloring, optional

Line a 13 x 9 inch baking pan with foil with foil hanging over all sides for easy removal later; grease foil with butter; set aside.

Chocolate layer:
In a large bowl, beat cream cheese until fluffy. Gradually beat in powdered sugar. Beat in melted milk chocolate, which can be melted in the microwave. Spread into prepared pan. Refrigerate 10 minutes.

Vanilla layer:
In a large bowl, beat cream cheese until fluffy. Gradually beat in powdered sugar. Beat in melted white chocolate and vanilla. Spread over chocolate layer. Refrigerate 10 minutes.

Strawberry layer:
In a large bow,l beat cream cheese until fluffy. Gradually beat in the powdered sugar. Beat in melted white chocolate and strawberry/raspberry extract. Tint with food coloring, if desired. Spread over the top. Cover; refrigerate for at least 8 hours or overnight.

Using the foil, lift the fudge out of the pan. Gently peel off foil; cut fudge into 1 inch squares.

Store in an airtight container in the refrigerator.
