Make this cake with the two ingredients that are everyone's favorites: chocolate and peanut butter! In no time at all, you will have the perfect dessert for family or company.
2 c. all-purpose flour
2 c. granulated sugar
1 t. baking soda
1 c. unsalted butter
1/4 c. unsweetened cocoa powder
1 c. water
1/2 c. buttermilk
2 large eggs, lightly beaten
1 t. vanilla extract
16 oz. creamy peanut butter
Icing:
1/2 c. unsalted butter
1/3 c. buttermilk
1/4 c. unsweetened cocoa powder
16 oz. powdered sugar, sifted
1 t. vanilla extract
Preheat oven to 350 degrees. Grease and flour a 9x13 inch baking pan.
In a large bowl, whisk together flour, sugar, and baking soda. Set aside.
Melt butter in a medium saucepan over medium heat.
Stir in cocoa powder, then water, buttermilk, and eggs. Continue cooking over medium heat, stirring constantly, until mixture boils.
Remove mixture from the heat and add to flour mixture. Stir until smooth. Stir in vanilla.
Transfer batter to prepared pan; spread evenly.
Bake 20 - 25 minutes, or until a pick inserted into the center of the cake comes out clean.
Cool in pan on wire rack 10 minutes. Spread the peanut butter over the cake. Allow to cool completely.
Icing:
Place the sifted powdered sugar in a large bowl. Set aside.
Combine butter, buttermilk, and cocoa in a small saucepan. Cook over medium heat, stirring constantly, until the mixture begins to boil.
Remove from heat and pour over powdered sugar. Stir until smooth, then stir in vanilla.
Spread icing over peanut butter.
Serve immediately or let it sit at room temperature to allow the icing to set.
