Fried dill pickles make a great appetizer or even a side dish similar to French fries. Serve with your favorite dipping sauce or enjoy them plain.
peanut oil, for frying
1 c. milk
1 egg
1/2 t. paprika
splash pickle juice
1 c. cornmeal
1 c. all-purpose flour
1/2 t. smoked paprika
1 t. salt, plus more for seasoning
1/2 t. freshly ground black pepper
2 t. finely chopped dill
1 jar whole dill pickles, sliced into spears
salt, to taste
your favorite dipping sauce, optional
Preheat deep-fryer to 375 degrees.
Beat milk, egg, paprika, and a splash of the pickle juice together in an 8x8 inch casserole dish.
Combine cornmeal, flour, smoked paprika, salt, pepper, and dill into another baking dish.
Thoroughly dry the pickles with paper towels.
First dredge through the wet ingredients and then the dry ingredients.
Gently place the pickles into the deep-fryer in batches and fry until golden brown, about 1 1/2 to 2 minutes.
Place on a paper towel lined platter and immediately season with salt.
Serve warm with your favorite dip.
