Fried mushrooms are fantastic on their own, but add some garlic to them and you have Heaven! Serve them as an appetizer or as a side dish and enjoy their wonderful taste!
16 even-sized open cup mushrooms, wiped clean and stalks cut level
3 T. olive oil
3 cloves garlic, chopped very finely
3 T. unsalted butter, softened
2 T. fresh thyme, chopped
1 t. garlic powder
5 T. fresh breadcrumbs
1 1/2 T. lemon juice
salt, to taste
freshly ground black pepper, to taste
Preheat oven to 400 degrees. Spray a 9x13 inch baking dish with cooking spray.
Lightly fry the mushrooms, cap-side down, in hot oil for 2-3 minutes.
Arrange mushrooms in the baking dish with the stalks facing upwards.
In a small bowl, mix together the butter, garlic, thyme, lemon juice and seasoning.
Spoon garlic butter onto each mushroom, then lightly press the breadcrumbs on top.
Either refrigerate for later use, or bake immediately in the oven for 15 minutes or golden around the mushroom cap.
