Kids and adults will enjoy this Italian treat. It's great to serve anytime of the year, but it really hits the spot on a hot summer day!
1 qt. water
2 c. sugar
3⁄4 c. freshly squeezed lemon juice
1 grated lemon rind, with no white parts
Boil water and sugar together for 5 minutes. Cool.
Stir in lemon juice and the peel. Pour contents into a shallow bowl; put in the freezer.
As it starts to freeze, keep stirring the outside crystals into the center; mix in peel.
It is important to do this about every half hour.
When very slushy, stop and freeze overnight.
To serve, scrape very thin layers of the slush off of the top with a large spoon.
