Coconut Bonbons

Description

These coconut bonbons remind me of my favorite coconut and chocolate candy bars. They can be made with or without the nuts. These are great around the holidays, and would make a great gift.

Ingredients

2 1/2 c. sweetened shredded coconut
24 oz. semi- sweet chocolate chips
1 can sweetened condensed milk
1 t. vanilla
1/2 c. chopped walnuts, or favorite nuts, optional
2 sticks butter or 1 cup at room temperature
2 lb. powdered sugar
1-2 T. shortening, coconut or vegetable oil

Mix butter, milk and powdered sugar, vanilla, and coconut oil.

In a large bowl, using a mixer, blend together the stick of butter with sweetened condensed milk. Add all of the powdered sugar. Mix thoroughly.

Add the chopped pecans and coconut to the powdered sugar mixture. Mix well. Place bowl in the refrigerator for at least 1 hour.

Shape into balls about 1 1/2 inches. Place on a plate/platter and place in the fridge for 1 hour to harden.

Melt the chocolate in a double boiler, or place a small saucepan inside a larger one and put water in the larger pan, or melt in the microwave.

Pick up each piece of candy with a toothpick, and one at a time dip in the melted chocolate. Push the candy off the first toothpick with another toothpick.

Place on waxed paper, allow to set.
