When you need a special appetizer or side dish, these crab-stuffed mushrooms will fill your needs. Just make sure that you have enough for everyone to have seconds!
1/3 c. mayonnaise or Miracle Whip
3 T. seasoned dry bread crumbs (or Panko)
2 1/2 T. grated Parmesan cheese
2 cloves garlic, finely chopped
1/8 c. scallions
6-1/2 oz. crabmeat or 1 c. frozen crabmeat, thawed
18 medium sized mushrooms, stems removed, wiped clean
Preheat oven to 400 degrees. Spray a baking sheet with non-stick cooking spray.
In small bowl, blend mayo, bread crumbs, cheese, scallions and garlic; fold in crabmeat. Spoon mixture into mushroom caps.
Place the filled mushroom caps on the baking sheet.
Bake 20 minutes or until heated through and lightly browned.
