Parmesan Truffle Fries

Description

If you have never experienced Parmesan truffle fries, then you are really missing out on a wonderful appetizer or side dish. They are easy to make at home, so don't delay!

Ingredients

cooking spray
2 large Russet potatoes, cut into fries, either peeled or unpeeled, your choice
salt, to taste
freshly ground black pepper, to taste
1 T. truffle oil
2 t. freshly grated Parmesan cheese
2 t. freshly shredded Parmesan cheese
herbs de provence, if desired

Preheat oven to 400 degrees. Spray a large baking sheet with cooking spray.

Wash and cut the potatoes into fries.

Arrange the fries on the prepared baking sheet. Spray them with cooking spray and season with salt and pepper.

Drizzle truffle oil all over the fries. (don’t use more oil, too much will overpower the fries).

Sprinkle both grated and shredded Parmesan cheeses over the fries.

Bake 25 - 30 minutes, or until the potatoes are golden brown and crisp. Sprinkle with more cheese and herbs de provence, if desired.

Serve hot/warm.
