Baked Sweet Potatoes

Description

Baked sweet potatoes are so healthy for you and are so delicious too. You can eat them plain, or top with butter and salt and pepper.

Ingredients

6 medium sweet potatoes, washed and unpeeled
6 T. unsalted butter or margarine, cut into 6 pats
1/2 t. kosher salt
1/8 t. freshly ground black pepper

Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil.

Pierce sweet potatoes several times with the tines of a fork. Place them on the baking sheet.

Bake about 45 minutes or until tender and can be pierced easily with a knife or fork.

Cut a slit in the top of each sweet potato. Top each with 1 tablespoon butter; season with the salt and pepper.
