Israeli Chopped Salad

Are you looking for a new salad to make? This is a fresh, great tasting salad with a light dressing that you and your family or guests will enjoy.

Ingredients

1/2 red onion, diced
1/2 red, green, orange, and yellow bell peppers, diced
1 Persian cucumber, peel left on and diced
1 pint small cherry tomatoes, halved
4 oz. feta cheese
5 - 6 T. extra virgin olive oil
freshly squeezed juice of 1 lemon
1/2 t. dried thyme
1/2 t. dried oregano
salt, to taste
freshly ground black pepper, to taste
parsley, mint, or thyme, for garnish, if desired

Cut all ingredients except the tomatoes in a small dice.

Toss veggies with the oil, lemon juice, and seasonings. Add salt and pepper, to taste.

Adjust the seasonings to your preference; refrigerate for a few hours.

Garnish with a few fresh herbs like parsley, mint, or thyme before serving, if desired.
