Enjoy a meatless dinner with this delicious pasta meal. Serve with a crusty bread.
¾ lb. dry penne pasta
6 oz. high quality mozzarella cheese, diced large
2 c. heirloom tomatoes, core removed, diced medium
1-2 sprigs fresh basil, sliced thick
1-2 sprigs fresh oregano, picked
3 T. extra virgin olive oil
salt and pepper, to taste
¼ t. crushed red pepper flakes or to taste
1 clove garlic, minced
Parmesan cheese, for garnish if desired
Cook pasta according to package instructions. Drain, (do not rinse) saving 1/2 c. cooking water.
Place tomatoes, mozzarella, garlic and basil in a large bowl.
Add cooked pasta to the bowl; toss seasoning with olive oil, salt and red pepper flakes.
Add extra olive oil, if desired. If you would like a little sauce, add in a little of the reserved cooking water.
Garnish with Parmesan cheese, if desired.
