Description
Enjoy a meatless dinner with this delicious pasta meal. Serve with a crusty bread.
Ingredients
- ¾ lb. dry penne pasta
- 6 oz. high quality mozzarella cheese, diced large
- 2 c. heirloom tomatoes, core removed, diced medium
- 1-2 sprigs fresh basil, sliced thick
- 1-2 sprigs fresh oregano, picked
- 3 T. extra virgin olive oil
- salt and pepper, to taste
- ¼ t. crushed red pepper flakes or to taste
- 1 clove garlic, minced
- Parmesan cheese, for garnish if desired
Steps
- Cook pasta according to package instructions. Drain, (do not rinse) saving 1/2 c. cooking water.
- Place tomatoes, mozzarella, garlic and basil in a large bowl.
- Add cooked pasta to the bowl; toss seasoning with olive oil, salt and red pepper flakes.
