This appetizer is delicious and so easy to make. You can have it ready in about 20 minutes. Just be sure to make enough for everyone.
6 Roma/plum tomatoes, chopped
1/2 c. sun-dried tomatoes, packed in oil
4 cloves minced garlic
1/4 c. olive oil
2 T. balsamic vinegar
1/4 c. fresh basil, stems removed
1/4 t. salt
1/4 t. freshly ground black pepper
1 French baguette
Mozzarella cheese, optional
Preheat oven to the broiler setting.
In a large bowl, combine plum tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Let mixture sit for 10 minutes.
Cut baguette into 3/4 inch slices. Arrange the bread slices on a baking sheet in a single layer.
Place a little olive oil on each slice of bread.
Broil for 1 - 2 minutes, until slightly brown. Remove from broiler.
Spread the tomato mixture evenly over the baguette slices.
** If you would like, put some Mozzarella cheese on each bread slicewith and heat to melt the cheese.
