Zucchini Bread

Description

If you have a lot of zucchini that you don't know how to use, make zucchini bread. Even if you don't have your own garden, you can enjoy the classic bread using store bought zucchini instead.

Ingredients

3/4 c. packed brown sugar
1/2 c. vegetable oil
2 large eggs
2 t. vanilla extract
1/2 t. cinnamon
1/4 t. nutmeg
1 1/2 c. all-purpose flour
1/2 c. whole wheat flour
1 t. baking soda
1/2 t. baking powder
1/4 t. salt
1 1/2 c. freshly grated zucchini (with skin on)
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Butter and flour a loaf pan.

Whisk the sugar and oil together; add vanilla and eggs (one at a time); beat in-between. Add in cinnamon and nutmeg.

Whisk the flours, baking soda, baking powder and salt together; add to the wet ingredients. Mix until just blended, don't over mix. Fold in zucchini and nuts.

Spread out evenly in the prepared loaf pan.

Bake about 50 minutes. It's done when a wooden toothpick inserted near the center comes out clean.
