Description
Make this healthier version of meatloaf. The meatloaf has a nutty flavor that makes it truly delicious and different.
Ingredients
- 3 T. butter
- 1 onion, finely chopped
- 1 rib celery with leafy tops, finely chopped
- 1 small carrot, peeled and grated or finely chopped
- 1/4 c. dry sherry or white wine
- 1/4 c. chopped hazelnuts, toasted
- 1/4 c. pine nuts, toasted and chopped
- 1 1/2 lb. 94% lean ground turkey
- salt and pepper, to taste
- 1/2 t. freshly grated nutmeg
- 1/4 t. ground cloves
- 1 1/2 c. fresh breadcrumbs
- 1/3 c. milk
- 1 large egg, beaten
- 1/4 c. flat-leaf parsley, finely chopped
- 8 - 10 sage leaves, thinly sliced
- 2 T. thyme, finely chopped
- olive oil, for drizzling
Steps
- Melt butter in a skillet over medium heat; cook onion, celery and carrots to very tender, about 10 minutes.
- Add sherry or wine; let evaporate; cool.
- Toast the pinenuts and hazelnuts together in a small pan; cool.
