Cucumber Salsa
Description
Need a tasty but quick appetizer? Make this cool salsa in a jiffy. Serve with tortilla chips or scoops.
Ingredients
6 cucumbers, washed, peeled and diced
1 can Rotel tomatoes
1/4 c. apple cider vinegar
1 pkg. dry Ranch dressing
1 medium red onion, chopped

Wash, peel and remove the seeds from the cucumbers. Chop the cucumbers into small salsa sized chunks. In a bowl, add the cucumbers, Ro-Tel tomatoes, Ranch dressing and white vinegar. Mix well.
Serve with tortilla chips or Fritos.
