People love zucchini fries, but they aren't always so good for you because they are typically fried. These delicious fries are baked instead, are better for you and don't lose the taste and the crunch.
extra virgin olive oil
extra virgin olive oil spray
4 medium zucchini
1 c. dry bread crumbs
¼ c. freshly grated Parmesan or Pecorino cheese
1 t. garlic powder
½ t. ground paprika
1/8 t. dried oregano
1/8 t. crushed red pepper flakes
1 t. sea salt
2 large eggs
Preheat oven to 425 degrees. Line 2 baking sheets with parchment paper, then brush parchment paper with olive oil.
Cut each zucchini in half crosswise, then cut each half lengthwise into halves or in thirds, and then each one of those pieces into 4 sticks or into ½ inch wide sticks.
In a shallow dish/platter, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, oregano, red pepper flakes and salt.
In a separate shallow dish, beat eggs well.
One at a time, dip each zucchini stick first into the egg mixture, then into the bread crumb mixture. Shake to remove excess; place on the prepared baking sheet.
When all fries have been coated with the breadcrumb mixture and have been placed on the prepared baking sheet, spray them with olive oil.
Bake 15-20 minutes, flipping over halfway to brown on both sides. Bake until golden and crispy on the outside and soft on the inside.
Serve plain, with marinara sauce or ranch dressing.
