Peanut butter lovers will love this cake. There is peanut butter in the cake itself, along with sugar, brown sugar, and buttermilk, and then there is peanut butter in the frosting as well.
cake:
1/4 c. creamy peanut butter
1 c. water
1/2 c. butter
1 c. sugar
1 c. brown sugar
2 c. flour
1 t. salt
1 t. baking soda
2 eggs
1/2 c. buttermilk
1 t. vanilla
frosting:
3/4 c. butter
6 T. c. peanut butter
3 1/2 c. powdered sugar
1 T. vanilla
Preheat oven to 375 degrees. Grease or line a 12x17 inch cookie sheet/jellyroll pan that has sides with parchment paper.
cake:
In a medium pot, add peanut butter, water, and butter; bring to a boil. Remove from heat.
In a separate bowl, mix together sugar, brown sugar, flour, salt, and baking soda with a fork. Add to the peanut butter mixture.
Add eggs, buttermilk, and vanilla to the bowl; mix well. Pour into the prepared pan.
Bake 15 minutes.
frosting:
In a small pot, bring butter, buttermilk, and peanut butter to a boil. Remove pan from the heat; add the powdered sugar and vanilla.
Pour frosting over the warm cake.
