Description
One way to get your family to eat their veggies is by putting them in their desserts and snacks! These wonderful cookies have healthy zucchini and oatmeal in them along with wonderful spices. They are topped with frosting and are so yummy!
Ingredients
1½ c. flour
1 c. sugar
½ t. baking soda
½ t. salt
¼ t. nutmeg
¾ t. cinnamon
¾ c. shortening
1 egg
1 c. grated zucchini
1¾ c. quick oats
frosting:
½ c. butter, softened
3 T. milk
2 t. vanilla
3-4 c. powdered sugar

Preheat oven to 400 degrees. Grease a cookie sheet.
Combine flour, sugar, baking soda, salt, nutmeg and cinnamon together in a large bowl; stir to combine. Cut in shortening; beat in egg until well combined. Add zucchini and oats; beat until evenly mixed.
Spoon drops of dough onto cookie sheet.
Bake 8-10 minutes. Cool.
frosting:
Cream butter in a medium bowl; add remaining ingredients; beat until smooth. Add more milk and/or powdered sugar to get desired consistency.
Frost cookies when cooled; sprinkle tops with a little nutmeg.
