Instead of serving your Sloppy Joes on buns, try this fun twist. Serve them in a biscuit cup.
1 lb. ground chuck beef, 80% lean or ground turkey, if you prefer
1/2 c. yellow onion, chopped
15 oz. Sloppy Joe Sauce, your favorite
12 oz. refrigerated Texas-style buttermilk biscuits
2/3 c. shredded Cheddar and Monterey Jack cheese blend, or your favorite
Preheat oven to 400.
Heat a large skillet over medium-high heat and cook beef and onion 7 minutes or until beef is crumbled and no longer pink, stirring occasionally; drain and discard grease. Add Sloppy Joe sauce; cook 1 minute more or until hot.
Meanwhile, press 1 biscuit into the bottom and up the sides of each medium muffin cup, being careful not to tear dough. Place 1/4 c. meat mixture in each cup. Bake 10 - 12 minutes or until biscuits are golden brown.
Sprinkle cheese evenly over top of each cup; let stand 1 minute or until cheese softens. Carefully remove from pan and serve.
