Serve these Cauliflower bites the same way that you serve fried mushrooms or fried pickles. They make a delicious appetizer, snack or side dish.
1/2 c. vegetable oil
1 cup Panko Japanese bread crumbs
1/4 c. grated Parmesan cheese
1 T. Creole Seasoning
4 c. cauliflower florets
1/2 c. all-purpose flour
2 large eggs, beaten
Ranch dressing or favorite dipping sauce, if desired
Heat oil in a large skillet over medium-high heat.
In a large bowl, combine Panko, Parmesan cheese and Creole seasoning; set aside.
Working in batches, dredge cauliflower first in flour, next dip into eggs, then dredge in Panko mixture, pressing firmly to coat.
Add cauliflower to the skillet, 5 - 6 at a time, and cook until evenly golden and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
Serve immediately with your favorite dipping sauce.
