Don't resort to that canned vegetable soup when you can easily make your own. It will be healthier and more delicious as well. If you want to make it vegetarian, use vegetable broth/stock instead of chicken broth/stock.
½ medium onion, diced
30 oz. canned mixed vegetables, drained
1 c. fresh or frozen Lima beans
1 c. fresh corn off the cob or frozen
1 c. carrots, sliced
1 c. chopped celery
1 c. red pepper strips
1 c. broccoli
1 c. cubed potatoes
1 c. mushrooms
2 c. chicken broth/stock
salt and pepper, to taste
Line the crock of the slow cooker with a crock pot liner for easy clean up.
Add all ingredients in the slow cooker. Cook 4 hours on Low setting.
