No bake icebox cakes are wonderfully easy to make, but time is needed to refrigerate them for at least 6 hours. Cool Whip can be substituted for the heavy cream, sugar and vanilla.
45 Chips Ahoy Cookies from 2 packages plus 2 extra for garnish
3 c. heavy cream, cold
3 T. sugar
1 t. vanilla
Place cold cream, sugar and vanilla in a large bowl. Beat on high until stiff peaks form, set aside.
Place cookies to cover the bottom of a 9x13 pan which will probably be 3 layers x 15 cookies.
Spread ⅓ of the whipped cream on top of the cookie layer. Repeat with cookies and then whipped cream two more times, finishing with a layer of whipped cream.
Crush remaining cookies and sprinkle them on top of the cake. Cover and refrigerate for 6 hours or overnight.
Serve.
