This bread will be special anytime but especially during holiday time. Serve warm with butter or toasted with butter.
3 eggs
1-1/2 c. sugar
3/4 c. vegetable oil
1 t. vanilla extract
3 c. all-purpose flour
2 t. baking powder
2 t. ground cinnamon
1 t. baking soda
1 t. salt
4 c. finely chopped peeled ripe pears (about 4 medium)
1 t. lemon juice
1 c. chopped walnuts
Preheat oven to 350 degrees. Grease two 9x5 inch loaf pans or six mini 5x3 loaf pans.
In a bowl, combine eggs, sugar, oil and vanilla; mix well.
Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture, just until moistened.
Toss pears with lemon juice. Stir pears and walnuts into batter (batter will be thick).
Spoon into loaf pans. Bake 55-60 minutes or until a toothpick inserted near the center comes out clean.
Cool 10 minutes before removing from pans to wire racks.
