It's getting close to the time of year where you want a warm soup to comfort you and your family. If you like stuffed peppers, then you will absolutely love this soup. Serve it as the main dish or as a side.
2 lb. lean ground beef
2 qt. water
28 oz. can tomato sauce
28 oz. can diced tomatoes, undrained
2 c. cooked long grain rice
2 c. chopped green peppers
1/4 c. packed brown sugar
2 t. salt
2 t. beef bouillon granules
1 t. pepper
In a Dutch oven or stock pot that will hold 2 1/2 quarts, cook ground beef over medium heat until no longer pink; drain.
Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender.
Yield: 10 servings.
