What a great cake to make in just a few minutes. If you have last minute company or just need a quick and easy dessert, try this wonderful recipe.
2 c. heavy whipping cream, cold
9 oz. package Nabisco Chocolate Wafer Cookies
1 t. almond or vanilla extract, optional
1-2 T. powdered sugar, optional
shaved chocolate, or cocoa powder, for topping, optional
Pour cream into a large mixing bowl; beat with a whisk or electric mixer with whisk attachment, until stiff peaks form; whisk in extract and powdered sugar, if desired.
Build a stack of chocolate wafers with about 2 teaspoons whipped cream in between in very small, disposable loaf pans, lined with plastic wrap which makes it easier to assemble. Put the stack on its side on a serving platter; cover with remaining whipped cream.
Sprinkle cocoa powder on top or shave chocolate on top for a pretty topping.
When ready to serve, slice diagonally across the cake, to show off the layers.
