It's apple picking time and time to make this delicious Irish Apple Cake. Enjoy it for dessert, for breakfast with your coffee or as a snack later in the day.
4 T. butter, softened at room temperature
1 c. granulated sugar
1 egg, beaten, at room temperature
4 Granny Smith apples, cored, peeled and diced, 2 cups worth
1⁄4 c. chopped walnuts
1 t. vanilla extract
1⁄2 t. baking powder
1⁄2 t. baking soda
1⁄2 t. salt
1⁄2 t. ground cinnamon
1⁄2 t. ground nutmeg
1 c. all-purpose flour
Preheat oven to 350 degrees. Grease an 8x8 inch cake pan.
In a large bowl, cream the butter and sugar together until light and fluffy. Add the egg, apples, nuts, and vanilla; stir well.
Sift in the dry ingredients; mix well.
Pour batter into the prepared cake pan; bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean.
Remove from oven; let cake set in the pan for 5 minutes; remove cake from pan.
Serve warm or at room temperature with whipped cream or ice cream.
