Love hummus and autumn? Make this delicious pumpkin hummus dip and serve with your favorite dippers!
Ingredients
- 1 small garlic clove
- 15 oz. can chickpeas, drained and rinsed
- 15 oz. can pumpkin puree (1¾ c. pumpkin puree) (Not pumpkin pie filling)
- ½ t. kosher salt
- 1 t. ground cumin
- juice from 1 lemon
- 1 T. olive oil
- pinch cayenne, optional
Steps
- Peel the garlic clove and put it in the bowl of a food processor. Process until finely chopped.
- Add chickpeas, pumpkin puree (or less, if you like a thicker hummus), kosher salt, cumin, lemon juice and olive oil. Add cayenne, if desired.
- Blend thoroughly to combine.
