This fluffy, light dessert will be a treat for anyone you serve it to. They might even ask you for the recipe.
18 crushed graham crackers (about 2 1/2 c.) plus extra for garnish
1/2 c. butter, melted
1/2 c. butter, softened
2 c. powdered sugar
2 eggs
1 t. vanilla
14 oz. pineapple, crushed
2 c. heavy whipping cream
maraschino cherries, optional
Preheat oven to 325 degrees.
Crush graham crackers; add melted butter. Press mixture into an 8×8 inch baking pan.
Bake 10 minutes; cool.
Cream together softened butter, eggs, vanilla and powdered sugar. Spread mixture over cooled crust.
Bake 15 minutes; cool completely.
Whip cream until stiff peaks form.
Drain juice from pineapple; fold pineapple into the whipped cream. Spread mixture over pan.
Garnish with graham cracker crumbs. Top with maraschino cherries, if desired.
Refrigerate; serve cold.
