In about 30 minutes you will have delicious cookies that will remind you very much of banana bread, but with chocolate chips to boot!
1 c. sugar
1 stick butter
2 eggs
1 c. ripe mashed bananas from about 3
1 t. vanilla extract
2 c. all-purpose flour
1 t. baking soda
1/4 t. salt
1 c. semi-sweet chocolate chips
1/2 c. chopped walnuts
Preheat oven to 350 degrees. Grease baking sheets with non-stick cooking spray.
In a large bowl, cream together sugar and butter until light and fluffy. Add eggs; beat thoroughly; beat in mashed bananas and vanilla until well combined. Slowly blend in flour, baking soda, and salt; mix until just combined. Fold in chocolate chips and walnuts.
Drop mixture by teaspoonfuls onto prepared baking sheets.
Bake 12 - 15 minutes, or until light golden. Remove to wire racks; cool completely.
Yield: 4 dozen.
