Description

This is the perfect time of year to make this cake. It's moist, rich and easy to make with little clean up.

Ingredients

• 2 eggs
• 1 3/4 c. sugar
• 2 heaping t. cinnamon
• 1/2 c. oil
• 6 medium Gala or Fuji or Honey Crisp apples, peeled
• 2 c. all-purpose flour
• 2 t. baking soda

Steps

1. Preheat oven to 350 degrees. Grease a 9x13 inch pan or two 9 inch round pans.
2. In a large bowl, mix eggs, sugar, cinnamon and oil.
3. Wash, peel and slice apples; add to the mixture, coating apples thoroughly.
