This is the perfect time of year to make this cake. It's moist, rich and easy to make with little clean up.
2 eggs
1 3/4 c. sugar
2 heaping t. cinnamon
1/2 c. oil
6 medium Gala or Fuji or Honey Crisp apples, peeled
2 c. all-purpose flour
2 t. baking soda
Preheat oven to 350 degrees. Grease a 9x13 inch pan or two 9 inch round pans.
In a large bowl, mix eggs, sugar, cinnamon and oil.
Wash, peel and slice apples; add to the mixture, coating apples thoroughly.
Mix together baking soda and flour; add to the ingredients in the bowl. Mix with a fork until all flour is absorbed by the wet ingredients.
Pour mixture into pan(s).
Bake about 55 minutes.
