Everyone has heard of pineapple upside-down cake, but how about apple upside-down cake? It's a delicious, fluffy cake that will surely impress! Serve with vanilla ice cream and/or warm caramel sauce.
apples:
2 medium Fuji apples or similar, peeled, cored and sliced into circles
1/2 stick butter, melted
1/4 c. brown sugar, packed
1/2 t. cinnamon
1/4 t. ground nutmeg
cake:
1 1/2 c. all-purpose flour
1 c. sugar
2 t. ground cinnamon
1/2 t. ground nutmeg
1/2 t. baking soda
1/4 t. baking powder
1/4 t. salt
3/4 c. whole milk
1/4 c. vegetable oil
2 t. vanilla extract
1 egg
Preheat oven to 350 degrees. Grease a 9 inch round cake pan.
Wash apples, peel if desired; cut into 1/4 inch slices.
Pour the melted butter in the bottom of the cake pan. Add 1/2 t. cinnamon and 1/4 t. ground nutmeg and 1/4 c. brown sugar.
Arrange apple slices in a decorative pattern in the melted butter mixture. This will be the top later.
In a large mixing bowl, whisk together flour, sugar, baking soda, baking powder, salt, and the remaining cinnamon and ground nutmeg.
Stir in the milk, vanilla, oil and egg. Do not over mix.
Pour batter into the cake pan, on top of the apple slices.
Bake 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
Invert the hot cake onto a platter; let stand for about 5 minutes. Remove the pan; scrape any fruit slices clinging to the pan; arrange them over the cake.
