This popular Cuban highball is a favorite during the summer, but don't limit it just to the summertime. It combines the sweetness of the sugar with refreshing lime and mint which is good anytime of the year.
10 fresh mint leaves plus extra for garnish
1/2 lime, cut into 4 wedges
2 T. white sugar, or to taste
1 c. ice cubes
1 1/2 fluid oz. white rum
1/2 c. club soda or sparkling water
Place mint leaves and 1 lime wedge into a sturdy glass. Using a muddler, crush the mint and lime in order to release the mint oils and lime juice. Add 2 more lime wedges and the sugar; muddle again to release the juice. Do not strain.
Fill the glass almost to the top with ice. Pour rum over the ice; fill the glass with club soda. Stir, taste, and add more sugar, if desired.
Garnish with the last lime wedge and mint leaves.
Makes 1 mojito.
