These baked apples are quick to make and delicious to eat. If you go apple picking, this could be a great activity to do with your kids when you get home!
6 apples
8 oz. cream cheese, softened
¼ c. sugar
1 t. vanilla
1 egg
1 t. cinnamon
graham cracker crumbs, caramel sauce, and/or pecans, if desired
Preheat oven to 350 degrees.
Wash apples. Chop off the tops of the apples; scoop out the insides; discard the core and seeds.
In a medium bowl, cream together creamcheese and sugar until smooth. Mix in vanilla, egg, and cinnamon until smooth. Fill each apple ⅔ full with the cheesecake mixture.
Place filled apples on a baking sheet lined with parchment paper making sure they aren't touching. Bake 20-25 minutes until cheesecake filling is set. Transfer to a plate/platter; place in the refrigerator until completely cooled.
Serve apples at room temperature or chilled. If desired, top with caramel sauce, graham cracker crumbs, and/or pecans.
