Remove your guilt for the love of cookies with this healthier version. It satisfies your cookie monster cravings.
3/4 c. butter or margarine, softened
3/4 c. brown sugar
1/2 c. Karo Light or Dark Corn syrup
1 egg
2 t. pure vanilla extract
2-1/2 c. all-purpose flour
1 t. baking soda
1/4 t. salt
1 t. cinnamon
1/2 c. quick oats, NOT INSTANT
1/2 c. slivered almonds
1/2 c. dried cherries
1/2 c. golden raisins
1/4 c. flax seed
2 T. chia seeds
Preheat oven to 350 degrees. Lightly grease cookie sheets with non-stick cooking spray.
Beat butter and sugar with an electric mixer in a large bowl until fluffy. Beat in corn syrup, egg and vanilla; gradually beat in flour, baking soda, salt and cinnamon until combined.
Stir in oats, almonds, cherries, raisins, flax seed and chia seeds.
Drop cookie dough by heaping tablespoonfuls 2 inches apart onto the prepared cookie sheets.
Bake 9 - 11 minutes or until lightly browned. Cool 1 - 2 minutes on the pan; remove from the pan to a wire rack.
