What to do with all of those apples that you picked when you went apple picking? Here is an idea-bake them! That's right, bake them stuffed with goodies like brown sugar, butter, cinnamon and pecans!
4 large baking apples, such as Honeycrisp, Granny Smith or other tart green apples
1/2 stick butter, softened
1/2 c. brown sugar
3/4-1 t. cinnamon
1/4 c. chopped pecans or walnuts
3/4 c. water
Preheat oven to 375 degrees.
Wash apples. Core apples from the top by cutting out the core and scooping it out leaving a well and enough of the base of the apple to hold the filling. Don't cut all the way through.
Combine butter, brown sugar, cinnamon and chopped pecans in a small bowl. Roll cylinder shapes of the mixture and press enough into each apple to fill the core.
Fill a 2 qt. baking dish with about 3/4 cup water, or enough to cover the bottom. Place apples upright in the baking dish.
Bake about 40 minutes to 1 hour or until the apples are soft and the filling is browned.
