Tired of the packaged variety of pop tarts that taste like cardboard, but not tired of pop tarts themselves? Try making your own with this easy recipe.
15 oz. package refrigerated pie crusts
1/4 c. strawberry jam or your favorite flavor, divided
2 c. powdered sugar
2 T. milk
1/2 t. vanilla extract
1 T. colored decorating sugar, optional
1 T. colored sprinkles, optional
Preheat oven to 425 degrees. Line baking sheets with parchment paper.
Unroll pie crusts, place on a lightly floured work surface, and roll the crusts slightly with a rolling pin to square the edges. Cut each crust into 8 rectangles of equal sizes to equal 16 squares in total.
Place 2 teaspoons jam in the center of 8 squares; spread the jam out to within 1/4 inch of the edges of the pastry squares. Top each with another pastry square; use a fork to crimp the squares together, sealing in the jam. Tim the pastries, if desired.
Move the filled pastries to the prepared baking sheets.
Bake until edges are lightly golden brown, about 7 minutes. Cool on the baking sheets.
Frosting:
Stir together the powdered sugar, milk, and vanilla extract in a bowl. Spread the cooled tarts with frosting; sprinkle with colored sugar or colored sprinkles, if desired.
