These wonderful cookies are simple to make but oh, so good! They are soft and chewy but still crisp. If you would like make them with your favorite nuts, raisins or chocolate chips.
1 c. butter flavored shortening
1 c. granulated sugar
1 c. brown sugar, packed
2 eggs
i t. vanilla
3 c. quick-cooking oats
1 1/2 c. all-purpose flour
1 t. salt
1 t. baking soda
1/4 t. ground nutmeg (freshly grated makes a big difference!)
1/4 t. cinnamon
1/2 c. pecans or walnuts, finely chopped, optional
Preheat oven to 350 degrees.
In a mixing bowl, cream shortening with granulated and brown sugars until well combined.
In a separate bowl, beat eggs together; add vanilla; stir to combine. Add to the shortening and sugar mixture; mix well.
In a separate bowl, combine flour, salt and baking soda. Mix carefully into the egg and shortening mixture until well combined. Add oats; mix well. Add the finely chopped pecans, if using; mix well to combine.
Drop by a tablespoon 2 inches apart on ungreased baking sheets. Flatten lightly with a fork.
Bake 10-12 minutes or until lightly browned. After cooling a couple of minutes, move to wire rack to cool.
**These cookies will firm up as they are cooling.
