Make your whole meal at one time with this yummy dish. Your crockpot does all of the work so you don't have to.
4 chicken breasts, not frozen
1 large or 2 small cans cream of chicken soup
2 boxes stuffing mix, chicken flavor
1 cup sour cream, regular or light
3-4 ribs celery, chopped or 1 small package frozen green beans
Line crockpot with a crock pot liner for easy clean up. Spray the liner with non-stick cooking spray.
Place the chicken breasts in the bottom of the crockpot. Pour the dry stuffing mix over the raw chicken.
In a separate bowl, mix together the soup and sour cream. Spread this mixture over the dry stuffing mix. Place the celery/green beans on top. Pour 1 cup water on the top.
Cook on High for 4 hours or on Low for about 7 - 8 hours. When the chicken is about half way done, use a fork to fluff the stuffing mix, which allows the water to fall through the soup mix and create steam to cook the stuffing. Use less water if you prefer a dry stuffing or more water if you like it moist.
