These are not your ordinary blondies. What makes them special is the espresso powder and the cardamom flavors. That's a good thing!
2 sticks unsalted butter, room temperature
1 c. brown sugar
1/2 c. granulated sugar
1 heaping T. instant espresso powder
1 heaping T. ground cardamom
2 eggs
1 t. vanilla extract
2 c. all-purpose flour
1 t. baking soda
1 t. salt
10 oz. bag bittersweet chocolate chips
Preheat oven to 350 degrees. Line a 9 x 13 inch glass baking dish with parchment paper or spray it with non-stick cooking spray.
Cream butter, espresso powder, cardamom and sugars together until fluffy, about 2 - 3 minutes.
Beat in eggs, one at a time, then add vanilla.
Whisk flour, soda and salt together; add to the eggs and butter, mix just until combined. Mix in the chocolate chips.
Spread the batter into the baking dish. Bake 30-35 minutes. DO NOT over bake. They should be wrinkled a bit around the edges.
Cut and serve.
