If you are needing quick, vegetarian meals or a tasty side dish, try this simple tomato sauce.
2 T. olive oil
1 small onion, chopped small
2-3 garlic cloves, minced
Pomi brand - 26.46 oz. container chopped tomatoes
salt, to taste
freshly ground black pepper, to taste
2 T. chopped fresh basil
1/4 - 1/2 c. water, if desired
fresh parsley, chopped
grated Parmesan cheese
Heat oil on medium heat about 2 minutes in a Dutch oven. Add onions; cook until slightly browned, 4 - 5 minutes; add garlic; cook for about 1 minute.
Add tomatoes, salt and black pepper, to taste. Add about 1/4 to 1/2 cup of water, if desired. Cover; cook on low heat about 15 - 20 minutes. Add fresh basil, stir and add more salt and pepper, to taste.
Serve on top of your favorite cooked pasta. Garnish with fresh, chopped parsley and grated Parmesan cheese.
