Description
If you want a special sandwich, try making this quick and easy chicken salad. It's a little different than most recipes, but is so delicious, you will wonder why you haven't made it sooner.
Ingredients
- 12 oz. cooked chicken, chopped (leftover, rotisserie or canned chicken works great)
- 3 T. finely chopped red onion
- 3 T. finely chopped celery
- 1 large egg, hard boiled, chopped
- 1 T. dill pickle relish
- 1/3 - 1/2 c. mayonnaise, or to taste
- 1/4 t. salt, or to taste
- 1/8 t. freshly ground black pepper
Steps
- In a bowl, combine chicken, onion, celery, and egg; toss to blend. Add relish, 1/3 c. mayo, salt and pepper; blend well. Add more mayonnaise, if needed.
- Serve on dollar rolls or croissants with lettuce leaves and tomato slices, if desired.
- Refrigerate leftovers.
