Potato chips and ground beef together in a casserole? Why not? It's worth trying, right? Serve with more chips or along with tortilla chips.
1 family size bag potato chips, any flavor, slightly crushed
1 onion, diced
1 lb. lean ground beef
1 clove garlic, minced
1 – 2 t. chili powder
1 c. salsa
1 c. sour cream
1 can cream of chicken or mushroom soup or your choice
2 c. shredded cheese, your favorite
flour tortillas, if desired
Preheat oven to 350 degrees. Spray a 2 quart, 9 x 9 inch or 8 x 8 inch casserole dish with non-stick cooking spray.
Place salsa in a collander and drain while preparing beef.
In a large skillet, brown the ground beef with onion and garlic. Drain and discard grease. Add chili powder. Stir; remove from heat.
In a large bowl, combine drained salsa, sour cream, soup and 1 c. cheese. Add in beef; stir well.
Place a layer of slightly crushed chips in the bottom of the casserole dish. Add half of the ground beef mixture. Repeat layers. Top with an additional 1 - 1 1⁄2 c. chips and remaining cheese.
Cover the casserole dish with aluminum foil that has been sprayed with non-stick cooking spray to prevent the cheese from sticking to the foil.
Cook covered with foil 25 minutes; uncover and cook another 15 minutes or just until hot and bubbly around the edges.
Serve with flour tortillas on the side, if desired.
