Olive Garden Copycat Lemon Cream Cake

You can make this beautiful and amazingly delicious cake in the comfort of your own home. It is so good and so pretty, no one will believe that you didn't buy it!

Ingredients

1 pkg. white cake mix, plus ingredients as directed on package
½ c. sour cream
1 t. vanilla extract

8 oz. mascarpone cheese
1 c. powdered sugar
lemon zest from half of the lemon
1 lemon, juiced
1 c. whipping cream

4 T. real butter, melted
1 pkg. lemon cake mix

Preheat oven to temperature as directed on the white cake mix box. Prepare the white cake according to the directions on the box, adding in the sour cream and vanilla.

Bake in a 10 inch round baking pan; cool completely.

Lemon cream filling;
Mix the mascarpone, powdered sugar, lemon juice, lemon zest of half of the lemon and whipping cream, then mix until creamy and smooth.

Crumb topping;
Combine 3/4 cup lemon cake mix with the melted butter to make a crumb topping.

Assembly of cake;
Cut the white cake across in half to spread the lemon cream filling between the two layers of white cake.

Frost the top of the cake with a thin layer of cream filling and sprinkle on the crumb topping.

Chill several hours before serving, if desired.
