This cheese ball is the perfect appetizer for any get together, but it is especially good during football season. Shape it like a football and decorate it to look like a football with laces of thin strips of white cheese.
16 oz. packaged cream cheese, at room temperature
2 c. finely shredded Cheddar cheese or your favorite (a Mexican blend is great)
1 oz. package Ranch dip/dressing mix
⅓ c. beer (Negra Modelo is great)
5 slices bacon, cooked and crumbled
2 T. pimiento peppers, drained and chopped
3 green onions, sliced
½ c. pretzel crumbs
pretzels of your choice, for serving
Beat cream cheese in a mixing bowl until light and fluffy then beat in the shredded cheese and the Ranch dressing/dip mix until thoroughly combined.
Slowly pour in the beer; mix until fully incorporated. Stir in crumbled bacon, peppers, and green onions.
Line a small bowl with plastic wrap that is hanging over the edges and then spoon the cheese mixture into the bowl. Press mixture into the bowl so that it takes on the shape of the bowl. Use the ends of the plastic wrap that are hanging over the edges of the bowl to wrap up the cheeseball firmly, but keeping it in the bowl.
Place bowl in refrigerator; let set up for 24 hours.
Remove cheeseball; press pretzel crumbs into all sides of the cheeseball.
Serve with pretzels of your choice.
