If you are trying to avoid breads, try these delicious and easy cauliflower biscuits. They aren't just like real biscuits, but you will still enjoy them!
1 1/2 lb. cauliflower, separated into florets
1 large garlic clove
2 eggs or 1/3 c. egg whites
1 T. cornstarch
1/2 c. + 3 T. low-fat Cheddar cheese (reserve the 3 T.)
1/2 t. salt
1/8 t. freshly ground black pepper
3 T. green onion, finely chopped
olive oil cooking spray
Preheat oven to 400 degrees. Line muffin tin with liners or use a silicone mffin tin that is sprayed with non-stick cooking spray.
In a food processor, add cauliflower in 3 batches; process until they are fine crumbs. In the last batch, add the garlic.
Heat non-stick skillet on medium – high heat; spray with non-stick cooking spray. Add cauliflower; cook 5 – 7 minutes or until a bit golden, stirring frequently and watching closely so as not to burn.
Whisk eggs in a medium bowl; add cornstarch; whisk until dissolved. Add cooked cauliflower with cheese (except 3 T.), salt, pepper and green onions; mix well.
Divide mixture evenly among muffin cups; top with reserved 3 T. cheese.
Bake 25 minutes. Remove from the oven; serve.
