If you are needing an elegant vegetable for an upcoming holiday meal, this one would be perfect. It's also easy and very quick to make, so you have more time for the other holiday dishes.
32 oz. bag fresh green beans, rinsed and drained
1/3 - 2/3 c. sliced or slivered almonds, toasted
2 T. butter
1 shallot, chopped
2-3 cloves garlic, minced
1 c. water
salt, to taste
pepper, to taste
Melt butter in a 12 inch skillet over medium-high heat. Add almonds and cook, stirring often, until lightly browned. Remove almonds; drain on paper towels.
Add shallots and garlic to skillet; cook until shallots are slightly softened.
Add green beans and water; cover and cook, tossing occasionally until green beans are crisp-tender.
Season with salt and pepper; top with toasted almonds.
