Each person served their own Heavenly muffin will be delighted! They are a cross between crumble coffee cake and a muffin, with fresh strawberries to boot! Just the thought of them will make your mouth water!
muffins:
¼ c. butter, softened
¾ c. white sugar
1 Egg
1 t. vanilla extract
1½ c. flour
2 t. baking powder
½ t. salt
½ c. milk or buttermilk
1½ c. fresh strawberries, diced small
crumble:
¼ c. butter, COLD
½ c. flour
¼ c. brown sugar
¼ c. sugar
Preheat oven to 375 degrees. Line muffin pan with liners.
Cream butter and sugar together in a mixing bowl. Beat in egg and vanilla. Mixture will be a bit lumpy, that's fine.
Combine flour, baking powder, and salt in a separate bowl. Slowly add milk and flour mix, alternating between the two, until incorporated in the butter mix. Beat until completely combined. Gently fold in about half the strawberries.
Place about 2 T. batter in each muffin liner. Put the remaining strawberries on the tops of the muffins.
In a mixing bowl, beat the crumble ingredients until it looks crumbly.
Sprinkle crumble over the strawberries.
Reduce oven heat to 350 degrees.
Bake muffins 18-20 minutes.
Makes 12-18 muffins
