If you don't live near a Starbucks, you are missing out of this delicious lemon loaf. Is it a cake or is it bread? Does it matter? It is fantastic for breakfast or dessert.
1 1⁄2 c. flour
1⁄2 t. baking soda
1⁄2 t. baking powder
1⁄2 t. salt
3 eggs, room temperature
1 cup sugar
2 T. butter, softened
1 t. vanilla extract
1 t. lemon extract
zest from one lemon
1⁄3 c. freshly squeezed lemon juice
1⁄2 c. oil
1 c. powdered sugar
1T. powdered sugar
2 T. milk
1⁄2 t. lemon extract
Preheat oven to 350 degrees. Grease and flour a 9 x 5 inch loaf pan.
In a large bowl, combine flour, baking soda, baking powder and salt.
In a medium bowl, combine eggs, sugar, butter, vanilla extract, lemon extract and lemon juice and zest with a mixer until blended.
Pour wet ingredients into dry ingredients; blend until smooth. Add oil; mix well.
Pour into loaf pan; bake 45 minutes until toothpick comes out clean. Remove from oven; cool in the pan on a rack.
Icing:
In a small bowl, combine powdered sugar, milk and lemon extract with a mixer until smooth.
When loaf has cooled, remove it from the pan; frost the top with icing. When icing has set, slice loaf.
