Description
This potato salad is warmed in the oven for 10-15 minutes, but it doesn't necessarily need to be. It can be served cold as well.
Ingredients
- 8 potatoes, cubed (4 peeled and 4 with skin)
- 2 t. salt
- 6 slices bacon, crisply cooked and diced (reserve some for top)
- 6 green onions, chopped (reserve some for top)
- 2 c. Cheddar cheese, shredded plus reserve a little extra for garnish
- 16 oz. sour cream
- 1⁄4 t. freshly ground black pepper
- 1 c. Miracle Whip or mayonnaise
- salt, to taste
Steps
- Wash potatoes; peel 1/2 of them and leave the skins on the other half. Cut into cubes; boil potatoes in salted water till just fork/knife tender. Drain.
- Fry bacon till crisp; dice bacon.
- Wash onions; slice them, including tops.
