Loaded Baked Potato Salad

Description

This potato salad is warmed in the oven for 10-15 minutes, but it doesn't necessarily need to be. It can be served cold as well.

Ingredients

8 potatoes, cubed (4 peeled and 4 with skin)
2 t. salt
6 slices bacon, crisply cooked and diced (reserve some for top)
6 green onions, chopped (reserve some for top)
2 c. Cheddar cheese, shredded plus reserve a little extra for garnish
16 oz. sour cream
1⁄4 t. freshly ground black pepper
1 c. Miracle Whip or mayonnaise
salt, to taste

Wash potatoes; peel 1/2 of them and leave the skins on the other half. Cut into cubes; boil potatoes in salted water till just fork/knife tender. Drain.

Fry bacon till crisp; dice bacon.

Wash onions; slice them, including tops.

Preheat oven to 350 degrees.

Combine sour cream, pepper and mayo/Miracle Whip. Add this to potatoes.

Add in bacon, onions and Cheddar cheese. Mix with potatoes. Season with salt, to taste.

Pour into baking dish. Top with reserved Cheddar cheese, onions, and bacon.

Bake 10-15 minutes or until cheese melts.
