Why not have the taste of mashed potatoes without the guilt? You can have exactly that with these easy cauliflower "mashed potatoes"! They are much healthier for you than regular mashed potatoes.
1 large head cauliflower, washed and cut into florets
1 T. olive oil
1-2 cloves garlic, minced
1/4 c. grated or shredded Parmesan cheese
1 T. reduced-fat cream cheese
1/2 t. kosher salt
1/8 t. freshly ground black pepper
butter and chopped chives or parsley, to garnish
Fill a saucepan with salted water. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes. Drain. (Keep warm.)
Heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
Transfer 1/2 of the cauliflower to a food processor; cover; blend on High.
Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, cheese, cream cheese, kosher salt, and pepper.
Garnish with butter and chopped chives or parsley.
